Knife sets are a waste of money: you need a good chef’s knife, a utility knife, and a serrated blade. Maybe good poultry shears.

Immersion blender over a regular one, unless you’re into smoothies. I’ve taken my blender out once, maybe twice in the past year, but use the immersion blender weekly.

And an electric pressure cooker will be FAR more useful than a dehydrator for almost everyone.

My kids don’t like traditional sugar cookies. I stumbled upon this recipe, and the kids love them. Without icing, they are not super sweet. A little icing adds just the right amount of sweetness.

In reply to spongesamfunpants. We made these in the 60’s without cocoa powder. Then rolled in coconut, pecans, chocolate shot, etc. they were delicious!!

In reply to Elly. I think the part about squeezing in a towel to remove excess moisture is the part you seem to have missed. The recipe is very well explained. I will be trying this one soon. Sounds delicious. My husband served in the Canadian Armed Forces in Iserlohn in the late 60’s.

I need to make 100 mini muffins and I have a large can of pumpkin and the recipe calls for a 15 oz. can of pumpkin. I have a 24 mini muffin pan, so I’ll be making enough to fill 4 of these. Do you have a suggestion how I should quadruple this recipe using the larger can of pumpkin?

Excellent recipe. I have made it several times. A couple of variations include 1/2 cup of ground almond and 1/2 cup of white chocolate chips. Finish with coating of white chocolate.

I was thinking that I rarely have room in my fridge to put a whole cookie sheet of unbaked cookies in my refrigerator to cool, so I’m glad to hear that you just cooled the batter first and it still worked out well.
